Thick Chocolate Sauce

Description

This is a “pastry-style” chocolate sauce. Unlike simple syrups, the corn flour gives it a rich, velvety body that clings to spoons and cakes. It is incredibly versatile: when warm, it is a pourable glaze; once chilled, it thickens into a spreadable frosting or a decadent dip for fruit and crackers.

Ingredients

  • 1 cup milk
  • 1½ tbsp extra fine YENE corn flour
  • 2 tbsp cocoa powder
  • 2–3 tbsp sugar (adjust to taste)

Instruction

1.In a bowl, combine corn starch, cocoa powder, and sugar.

2.Mix well to avoid lumps.

3.Pour in a small amount of milk first and stir into a smooth paste.

4.Gradually add the rest of the milk while mixing.

5.Pour the mixture into a pot.

6.Cook on medium heat, stirring constantly.

7.Once thick and smooth, remove from heat.

8.Use warm for pouring or let it cool to thicken more.
