Cottage Cheese Egg Bites

Description

These are a homemade, crustless version of a popular cafe breakfast. They are soft, airy, and creamy thanks to the cottage cheese, while the corn flour provides just enough “body” to keep them from collapsing after they come out of the oven. They are incredibly versatile and can be customized with whatever vegetables or herbs you have on hand.

Ingredients

  • 2 eggs
  • 3 tbsp cottage cheese
  • 1½ tbsp extra fine YENE corn flour
  • Salt to taste
  • Black pepper (optional)
  • 1–2 tbsp milk or water (to loosen mixture)
  • chopped herbs or vegetables (Optional)

Instruction

1.In a bowl, whisk the eggs well.

2.Add cottage cheese and mix until combined.

3.Season with salt, pepper, and herbs (if using).

4.Slowly sprinkle in YENE corn flour while mixing continuously.

5.Stir until the mixture is smooth and lump-free.

6.Lightly grease a muffin tray or small baking molds with oil.

7.Pour the mixture into molds (fill about ¾ full).

8.Bake at 180°C for 12–18 minutes.

9.Let the egg bites cool for 2–3 minutes before removing from molds.

10.Serve warm or chilled.
