Crackers

Description

These are thin, brittle wafers with a distinct toasted corn flavor. Unlike wheat crackers, these have a unique “snap” and a beautiful golden color. Because they are rolled very thin and pricked with a fork, they remain flat and crispy rather than puffing up, making them the perfect vessel for dips, cheeses, or enjoyed entirely on their own.

Ingredients

  • 1 cup extra fine YENE corn flour
  • 2 tbsp oil
  • ½ tsp salt (or to taste)
  • ¼ to ½ cup water (add gradually)

Instruction

1.In a bowl, add YENE corn flour and salt.

2.Pour in oil and mix well until the flour feels slightly crumbly.

3.Slowly add water little by little while mixing.

4.Cover the dough and let it rest for 10–15 minutes.

5.Place dough on a flat surface.

6.Roll it as thin as possible.

7.Cut into squares, strips, or triangles.

8.Prick small holes with a fork (prevents puffing).

9.Preheat oven to 180°C.

10.Bake for 12–15 minutes until golden and crisp. OR Fry in medium-hot oil until light golden and crispy

11.Let crackers cool completely (they become crispier as they cool).
