Crispy Corn Cheese Balls

25–30 minutes

3–4 people

Description

This is a popular “street food” style snack that uses the natural crispiness of corn flour to create a golden shell. The dough is simple and gluten-free (if using only corn flour), making it a light yet flavorful casing for the savory, melted cheese inside. They are perfect for dipping into a spicy sauce or enjoying on their own.

Ingredients

  • 1 cup YENE extra fine corn flour
  • ½ cup water (add slowly—you may not need all)
  • ½ tsp salt
  • ½ tsp black pepper (optional)
  • ½ tsp paprika or chili powder (optional)
  • ½ cup cheese (cut into small cubes)
  • Oil (for frying)

Instruction

1.Put YENE corn flour in a bowl.

2.Add salt and any spices you’re using.

3.Slowly pour in warm water a little at a time while mixing with your hand or spoon.

4.Take a small piece of dough (about the size of a walnut).

5.Flatten it in your palm.

6.Place a small cube of cheese in the center.

7.Wrap the dough around the cheese and roll into a smooth ball.

8.Pour oil into a pan (enough to cover the balls) heat on medium.

9. Gently place a few balls into the oil (don’t overcrowd).

10.Fry for about 3–5 minutes, turning occasionally.

11.Remove when they are golden brown and crispy.

12.Place on paper towel to remove excess oil.

13.Serve warm (best when the cheese inside is melty!).
