1 cup wheat flour
1/2 cup YENE corn flour
2 tbsp sugar (optional)
1 tsp baking powder
1 egg
1 cup milk (or water)
2 tbsp oil or melted butter
Pinch of salt
1.In a bowl, mix wheat flour, YENE corn flour, baking powder, sugar, and salt.
2.In another bowl, whisk the egg, milk, and oil.
3.Slowly pour the wet mixture into the dry ingredients.
4.Stir until you get a smooth batter (no lumps).
5.Heat a pan and lightly grease it with oil or butter.
6.Pour a small amount of batter into the pan.
7.Cook until bubbles form, then flip.
8.Cook the other side until golden brown.
9.Repeat for all pancakes.
